Enoki Beef Rolls

You’ve probably seen enoki wrapped in beef all over social media, but did you know how easy and tasty this is?

You can cook them on a skewer for tapas or cook them in a broth for a more comforting dish that soothes the soul.

These are all the ingredients you need and cilantro (optional).

You can find the shabu meat at an asian grocery store in the frozen section and it shouldn’t cost more than $15 for a pound!

I decided to cook the enoki beef rolls in a sukiyaki broth, you get sweet, salty, and umami flavor. It’s so delicious and you can save the broth for noodles or rice!

Ingredients:

  • thinly sliced beef

  • enoki 

  • 1 stalk green onions (diced)

  • 1 medium sized onion (sliced)

  • cilantro and green onions for garnish

Broth Ingredients:

  • 1 cup chicken broth 

  • 4 tbsp soy sauce 

  • 2 tbsp mirin 

  • 2 tbsp honey 

  • 2 tbsp shaoxing cooking wine 

  • 1-2 tbsp garlic 

Directions:

  1. Slice your onion and dice your green onions

  2. Wash your enoki and separate into small bunches

  3. Wrap your enoki in your thinly sliced shabu beef

  4. Saute your onions and white part of your green onions for 5 mins

  5. Place your enoki on top of your onions

  6. Pour in broth mixture

  7. 3 mins before your beef is cooked, add in your green onions and cilantro

  8. Eat by itself or enjoy over a bowl of rice
