Cheesy Kimchi Rice Balls
What are rice balls?
Rice balls also known as onigiri in Japan is a popular snack made from cooked rice, typically shaped into triangles or balls. They often contain tuna, salmon, and pickled plums! However, you add any filling you want when you make them at home yourself!!
What is the best rice to use for this?
Japanese short grain rice also known as sushi rice is the best as the texture is more sticky and won’t fall apart when making onigiri.
There is also a short cut which is using InnovAsian Sticky White Rice and it’s ready in 5 minutes.
Ingredients:
InnovAsian Sticky White Rice
6oz spam (diced)
1 cup kimchi (diced)
3 tbsp kewpie mayo
1 cup mozzarella cheese
Optional- seaweed flakes, furikake, and green onions
Sauce Ingredients:
1.5 tbsp honey
1 tbsp gochujang
2 tsp hot water
1 tbsp soy sauce
1/2 tbsp sesame oil
Directions:
Microwave InnovAsian Sticky White Rice for 5 mins
While the rice is in the microwave, sauté spam on medium heat until it’s golden crispy (about 3-5mins)
Add in kimchi and cook for another 2 mins on medium heat
Transfer rice to pot and turn the heat to low. Mix everything
Pour in sauce mixture, kewpie mayo, and cheese. Give it a good mix until the cheese is melted
Turn off the heat. Enjoy with seaweed or roll into 2-3 inch rice balls. Toss it in seaweed flakes and/or furikake.
Optional- Garnish with more kewpie mayo and green onions
This makes for a great snack to have at home or enjoy at a picnic!
