One Pot Rice Cooker Hainanese Chicken
What is Hainanese Chicken?
Hainanese Chicken is a simple poached chicken and seasoned rice dish. If you go to Asia, especially Singapore, you will see this classic dish everywhere for such an affordable price! It’s light, healthy, and a comforting meal to enjoy.
How long does it take to prepare?
If you cook this the traditional way, it will take about an hour and has quite a few steps. However, you could also make this in a rice cooker!
Does having the right rice cooker matter in this dish?
Yes, you need a good rice cooker because the cheaper ones might not cook the chicken all the way. I’ve been using the Tiger Brand rice cooker and it has been great for one pot meals.
Ingredients:
4 chicken thighs (boneless or bone in works)
2 cup jasmine rice
2.5 cups water or chicken broth
3 tsp Knorr Chicken Bouillon
2 Knorr Chicken Bouillon Cube (no cubes if using chicken broth)
1 bunch green onions
5 cloves garlic
1 tbsp sesame oil
3-5 slices of ginger
cucumbers and cilantro for veggies (but you can use what you have at home)
Directions:
Season chicken thighs with Knorr Chicken Bouillon and sesame oil and let it marinate for 30 mins
Smash whites of green onions, ginger, and garlic
Wash rice until water runs clear, add in water and two Knorr Chicken Bouillon Cube OR chicken broth
Place chicken thighs on top of rice with green onions, ginger, and garlic
Use the normal setting on the rice cooker, it should be cooked in about 30 mins or if it is not cooked, you can leave it in the rice cooker for about 10 more mins.
Take the chicken and let it rest for 5-10 mins
Take aromatics out of the rice and fluff up the rice
Cut chicken thighs and assemble dish
