What are Longevity Noodles (伊面)?

Longevity noodles are noodles that are eaten during celebrations which include Lunar New Years, birthdays, and weddings.

What does longevity noodles symbolize?

Exactly what the name is, long noodles mean long life. It also symbolizes prosperity and good luck, make sure not to break the noodles!

What noodle is used?

Yi-mein or e-fu noodles are used, they are typically packaged in a circle shape. Literally my childhood favorite noodles.

The other key ingredients you’ll need beside seasonings are dehydrated shiitake mushrooms and green onions.

Ingredients:

  • 1 package yi mein

  • 1 slice of ginger (diced)

  • 5 garlic cloves (minced)

  • 1 small onion (sliced) 

  • 5-7 rehydrated shiitake mushrooms (sliced)

  • 1/4 cup rehydrated mushroom liquid 

  • 6-8oz Chinese chives (cut in 2-3in pieces)

  • 2 spoon light soy sauce

  • 1 spoon dark soy sauce

  • 1 spoon sesame oil 

  • 2 spoon oyster sauce 

  • 1/4 tsp sugar 

  • dash of white pepper

 

Directions:

  1. Rehydrate shiitake mushrooms

  2. Boil yi mein for 3-4 mins MAX, drain and rinse with water (it does get soggy if you cook it longer)

  3. Sauté garlic and ginger for 1 mins

  4. Add onion and sautee for 2 mins

  5. Add rehydrated mushroom and liquid, sautee for 2 mins

  6. Add in longevity noodles and add in the seasonings listed above, mix gently so you do not break the noodles

  7. Add in Chinese chives and mix for another 1-2 mins
