Thumbprint Cookies
Ingredients:
1 cup softened unsalted butter
1/3 - 2/3 cup sugar (depends how sweet you like it) I used a little over 1/3 and it was perfect sweetness for my asian parents.
1/2 teaspoon(tsp) vanilla extract
2 cups all purpose flour
1 egg yolk
crofter’s strawberry jam for the filling
Directions:
Mix your softened butter and sugar first then add in your vanilla extract and egg yolk, mix again.
Sift and mix in your flour and knead, trust the process
Roll into thumbprint shape and keep in fridge for 30mins to 1 hour then take out (keeping it in the fridge will help keep its shape)
Fill the hole with your favorite jam
Bake at 350 for 14 to 18mins (depends on how strong your oven is)
