Easy Tom Yum Soup
What is Tom Yum Soup?
It is a popular hot and sour Thai soup. It is a very healthy soup and the flavor mostly comes from the herbs used. You can find every ingredient from an Asian market.
What protein is used in the soup?
Typically it is cooked with shrimp or chicken, but you can sub for salmon too and the flavor is pretty much the same. Rarely is this soup cooked with beef or pork.
What is it eaten with?
It is best eaten with rice.
PREP: 15 mins
COOK: 30mins to 1hr (longer it simmers, the more flavorful)
SERVES: 8-12
Ingredients:
10 slices galangal
3 shallots (cut into medium chunks)
2-5 lemongrass
8 cups vegetable broth
10 lime leaves
3-5 chili peppers (toasted)
1-2 whole lime juice (taste preference)
8-10 oz oyster mushrooms
3 cups grape tomatoes (sliced)
2 lbs salmon (cut into bite size chunks)
3 tbsp fish sauce (season to preference)
1 tsp salt (season to preference) '
cilantro for garnish
If it is too sour, add a bit of sugar to your tastebuds!
Directions:
Sauté galangal, shallots, and lemongrass until you can smell the aroma (about 5 mins)
Pour in your vegetable broth and let it come to a simmer
Add in your lime leaves and toasted chili peppers
Add in your oyster mushrooms, tomatoes, and salmon
Season with lime juice, fish sauce, and salt
Let it simmer until you’re hungry and garnish with cilantro
